We’re talking about the BBQ, not tobacco.

Real BBQing is done slowly using hardwood charcoal at lower temperatures. It’s an all-day undertaking, and it’s all about controlling the temperature and smokiness. Fancy rubs and marinades are hardly necessary. Ditto for fancy cuts of meat — use the cheap ones like brisket (with full fat!) and pork shoulder, butt, picnic cut, etc.

keep the lid down, but do check from time to time. the meat items need space around them for the smoke to circulate. best to stand ribs upright:

Some mid-century treasures in the Palm Springs area

The Parker Hotel has gone through a number of different owners with different themes but this time they got it right. Perched in South Palm Springs, the Parker is probably the most beautifully landscaped and renovated boutique hotel in the area. There is a croquet court and Pimms Cup No. 2’s are in order for croquet refreshments. Their super club, Mr. Parkers, is a mash-up of old school elegance and 60’s modernism revisited. Paintings by hip New York artists crowd the walls. Hotel interior was done by Jonathan Adler. We much prefer this to the over-the-top Viceroy. Their casual cafe Norma’s has an excellent lobster salad. And don’t forget to try one of their sour lemonade drinks out by the pool.

The current go-to place for nightlife is the Ace Hoteland swim club, Kings Highway and The Amigo Room. The excellent restaurant and lounge at the Ace was resurrected from an old Denny’s, gone groovy. They reinterpret classic American fare and have amazing hand-muddled cocktails. the perfect lighting ensures that everyone looks glamorous.
